  • 1 English or Japanese cucumber (sliced into 1/2-inch pieces)
  • 1/4 cup thinly sliced red onions
  • 1/4 cup olive oil
  • Juice and zest of 2 medium limes
  • 1 cup raw pumpkin seeds
  • 1 teaspoon olive oil or avocado oil
  • 3/4 teaspoon kosher salt
  • 1/2 teaspoon smoked paprika or ancho chili powder
  • 1/4 teaspoon cayenne pepper
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare the smoky lime pepitas by mixing pumpkin seeds with olive oil, salt, smoked paprika, cayenne pepper, and lime juice. Spread on a baking sheet and roast for 10-12 minutes.
  2. In a large bowl, combine cubed watermelon, cucumber slices, and red onions. Drizzle with olive oil and season with ancho chili powder, kosher salt, cayenne pepper, lime zest, and juice. Toss gently until well coated.
