  • 2/3 cup maple syrup or honey
  • 1/4 cup plain or vanilla Greek yogurt
  • 1/4 cup vegetable oil
  • 1 egg
  • 2 teaspoons vanilla essence
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine pumpkin puree, maple syrup or honey, Greek yogurt, vegetable oil, egg, and vanilla essence. Whisk until smooth.
  3. In another bowl, mix whole wheat flour with ground cinnamon, nutmeg, baking soda, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture using a rubber spatula until just combined (some lumps are okay).
  5. Spoon the batter into a muffin tin filled two-thirds full.
  6. Bake for about 18 minutes or until a toothpick inserted in the center comes out clean.
  7. Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack.
