  • 2 tablespoons olive oil
  • 1 pound boneless skinless chicken breasts, cut into 1-inch pieces
  • Salt and pepper to taste
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon dried rosemary
  • ½ teaspoon paprika
  • ¼ to ½ teaspoon chili powder
  • 1 small yellow onion, thinly sliced
  • 3 cups broccoli florets
  • 1 zucchini, thinly sliced
  • 1 small yellow bell pepper, chopped
  • 1 small red bell pepper, chopped
  • ¼ cup low-sodium chicken broth (or apple juice)
  • Fresh parsley for garnish

Instructions

  1. Season the chicken pieces with salt and pepper.
  2. In a bowl, combine garlic powder, onion powder, thyme, rosemary, paprika, and chili powder; season the chicken with half of this mixture.
  3. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add the chicken and cook for about 6 to 8 minutes until browned and cooked through. Set aside.
  4. In the same skillet, add the remaining olive oil and sauté onions for approximately 2 minutes.
  5. Add broccoli, zucchini, and bell peppers; season with the remaining spice mixture along with additional salt and pepper. Cook until vegetables are crisp-tender (4 to 6 minutes).
  6. Pour in the chicken broth or apple juice and stir to combine. Return the cooked chicken to the skillet and heat everything together for another minute.
  7. Remove from heat; adjust seasoning if needed and garnish with parsley before serving.
