  • 3/4 cup quick oats
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 6 Tbsp unsalted butter (melted)
  • 1/2 cup brown sugar (packed)
  • 2 eggs
  • 2 tsp vanilla extract
  • 1/2 cup milk
  • 1 cup finely chopped apple

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin pan with liners.
  2. In a large bowl, whisk together whole wheat flour, quick oats, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, mix melted butter and brown sugar until smooth. Add eggs, vanilla extract, and milk; whisk until well combined.
  4. Gently fold the dry ingredients into the wet mixture along with the chopped apples. Be careful not to over-mix.
  5. Fill each muffin liner evenly with batter and bake for 18-25 minutes or until tops are set.
  6. Cool in the pan for about 15 minutes before transferring to a wire rack to cool completely.
