  • 6 boneless skinless chicken thighs
  • 1/4 cup neutral oil
  • 2 large onions
  • 4 cloves garlic
  • 1 tbsp ginger
  • 2 Fuji apples
  • 2 carrots
  • 6 cups chicken stock
  • 1 block Japanese curry mix
  • Cooked rice

Instructions

  1. Heat neutral oil in a frying pan over medium heat. Sauté chopped onions until translucent, then add minced garlic and ginger.
  2. Mix in grated apples and chopped carrots; cook for 5 minutes. Pour in chicken stock and soy sauce, then add broken-up curry mix until dissolved.
  3. For the chicken katsu, set up three bowls: one with flour, one with beaten eggs, and one with panko breadcrumbs. Dredge each chicken thigh in flour, dip in egg, then coat with breadcrumbs.
  4. Fry the chicken in hot oil over medium-high heat for 4-5 minutes per side until golden brown.
  5. Serve on a bed of cooked rice with curry sauce poured over the top and drizzle with katsu sauce if desired.
