  • 2 medium green zucchini
  • 2 large red bell peppers
  • 1 large red onion
  • 1 pound asparagus
  • Olive oil
  • Kosher salt
  • Freshly ground black pepper
  • 1 pound cherry or grape tomatoes
  • Herby lemon vinaigrette
  • 4 ounces blue cheese or Parmesan

Instructions
