  • 2 pounds boneless skinless chicken breasts
  • 2 cups pineapple chunks
  • 1 red onion
  • 1 bell pepper
  • 1/2 cup soy sauce
  • 1/4 cup water
  • 2 tablespoons sweet rice apple vinegar
  • 1/2 cup brown sugar
  • 1 1/2 teaspoons minced garlic
  • 2 teaspoons minced ginger
  • 1 tablespoon cornstarch

Instructions

  1. In a small saucepan over medium heat, combine soy sauce, water, apple vinegar, brown sugar, garlic, and ginger. Bring to a boil then simmer for 5 minutes.
  2. Whisk cornstarch with 1 tablespoon of water; add to the saucepan and stir until thickened.
  3. Marinate chicken in half of the teriyaki sauce for at least 1 hour (overnight recommended).
  4. Preheat grill on medium heat. Thread marinated chicken and veggies onto soaked skewers.
  5. Grill kabobs for 3-4 minutes per side until chicken reaches an internal temperature of 170°F.
  6. Brush with remaining teriyaki sauce before serving.
