  • ½ cup extra-virgin olive oil
  • ⅔ cup chopped cilantro leaves
  • Zest and juice from 2 large oranges
  • Juice from 4 limes
  • 3 tablespoons chopped fresh mint
  • 6 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1½ teaspoons ground cumin
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 2 (1-pound) beef tenderloins

Instructions

  1. In a mixing bowl, whisk together the olive oil, cilantro, orange zest and juice, lime juice, mint, garlic, oregano, cumin, salt, and pepper until well combined.
  2. Place the beef tenderloins in a resealable bag or shallow dish and pour the marinade over them. Ensure the meat is well-coated. Seal or cover and refrigerate for at least four hours or overnight.
  3. Preheat the grill to medium-high heat.
  4. Remove the beef from the marinade and let excess liquid drip off. Grill for about 15 minutes per side until reaching an internal temperature of around 135°F for medium-rare.
  5. Allow the meat to rest for about ten minutes before slicing against the grain. Garnish with freshly chopped parsley if desired.
