  • 18 ounces green enchilada sauce (or red)
  • 3 cups cooked chicken (cubed)
  • 8 ounces cream cheese
  • 4 ounces canned green chilis
  • 3 cups cheddar cheese (shredded)
  • 8 large flour tortillas

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly spray a 9" x 13" baking dish with non-stick spray and spread about 1 cup of enchilada sauce on the bottom.
  3. In a medium mixing bowl, combine the cooked chicken, cream cheese, green chilis, and 2 cups of cheddar cheese until well mixed.
  4. Fill each tortilla with about 1/2 cup of the chicken mixture, roll them tightly, and place seam side down in the baking dish.
  5. Pour the remaining enchilada sauce over the rolled tortillas and sprinkle with the rest of the cheddar cheese.
  6. Bake uncovered for approximately 30 minutes until bubbly and golden brown on top.
