  • 2 large egg whites
  • 5 tablespoons white sugar (for egg whites)
  • 3 large egg yolks
  • 2 large whole eggs
  • 3 tablespoons white sugar (for yolks)
  • 7/8 cup chilled heavy cream
  • 3 tablespoons confectioners’ sugar
  • 3/4 teaspoon vanilla extract
  • 1/2 cup chilled mascarpone cheese
  • Cocoa powder (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine flour and instant espresso; set aside.
  3. Whisk egg whites until soft peaks form, gradually adding 5 tablespoons of sugar until stiff peaks form.
  4. In another bowl, beat egg yolks and whole eggs with remaining sugar until pale and fluffy; gently fold in dry ingredients.
  5. Carefully incorporate whipped egg whites into the yolk mixture using a rubber spatula.
  6. Pour batter onto the prepared baking sheet, spread evenly, and bake for about 8 minutes until set. Let cool slightly before transferring to a wire rack.
  7. For the filling, whip together heavy cream, confectioners’ sugar, vanilla extract, and mascarpone until soft peaks form.
  8. Once cooled, spread filling over the cake and roll tightly from one end using parchment paper for assistance.
  9. Dust generously with cocoa powder before serving.
