  • 4 chicken breasts
  • 1/2 cup unsalted butter
  • 3 cloves garlic, minced
  • 2 cups baby spinach
  • 2 cups broccoli florets
  • 2 cups golden potatoes, halved and roasted or boiled
  • Fresh parsley for garnish

Instructions

  1. Prepare your ingredients by chopping chicken and mincing garlic.
  2. In a large skillet over medium heat, melt half the butter. Add chicken, season with salt and pepper, and cook for 6-8 minutes until golden brown. Remove from skillet.
  3. Add remaining butter and garlic to the skillet; sauté for 30 seconds. Add broccoli and cook for 3 minutes until tender. Stir in spinach until wilted.
  4. Return chicken to the skillet along with potatoes. Mix gently and heat for another 2-3 minutes.
  5. Serve hot, garnished with chopped parsley.
