  • 2 cups rotini pasta
  • 3 cups chicken broth

  • 1 cup Velveeta cheese (cubed)
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 3 tablespoons unsalted butter
  • 2 tablespoons chopped parsley (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and season with salt, pepper, garlic powder, onion powder, paprika, and Cajun seasoning. Cook for 6-8 minutes until golden brown.
  2. Stir in minced garlic and butter; cook for an additional minute. Remove cooked chicken from the pan and set aside.
  3. In the same skillet, add chicken broth and bring it to a simmer. Add rotini pasta, cover, and cook for 10-12 minutes until tender.
  4. Reduce heat to low; stir in heavy cream, Velveeta cheese, and Parmesan until melted into a creamy sauce.
  5. Return the cooked chicken to the skillet; mix well to combine everything with the sauce.
  6. Top with shredded mozzarella cheese. Cover for 2-3 minutes until melted.
  7. Garnish with chopped parsley before serving.
