  • 1 tablespoon vanilla extract
  • 14 ounces sweetened condensed milk
  • 6 tablespoons rainbow sprinkles (for ice cream)
  • 12 tablespoons unsalted butter
  • 1 cup sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 2¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ¾ teaspoon salt
  • ½ teaspoon cream of tartar
  • 1 cup rainbow sprinkles (for cookies)

Instructions

  1. Prepare a baking pan lined with aluminum foil for the ice cream filling. In a bowl, whip the cream until stiff peaks form, fold in condensed milk and sprinkles, then freeze.
  2. Preheat the oven to 350°F. Cream butter and sugars together; add eggs and vanilla. Mix in dry ingredients and extra sprinkles.
  3. Chill cookie dough for about 30 minutes, scoop onto prepared sheets, then bake for approximately 11–12 minutes until just set.
  4. Once cookies cool, cut out rounds of frozen ice cream and assemble between two cookies. Refreeze before serving.
