  • 2 large tomatoes (beefsteak or heirloom)
  • 1/4 cup all-purpose flour
  • 1/4 tsp smoked paprika
  • Pinch salt and pepper
  • 1 egg
  • 1 cup panko bread crumbs
  • 1 cup oil of choice (I used olive oil)
  • 1 cup cooked corn
  • 1/4 cup feta cheese
  • 1/2 jalapeño (sliced)
  • 3 tbsp red onion (diced)
  • 2 tbsp cilantro
  • Pinch salt and pepper
  • 2 tablespoons fresh parsley, finely chopped

Instructions

  1. Prepare a coating station by setting up three plates: one with flour mixed with smoked paprika, salt, and pepper; one with whisked egg; and one with panko breadcrumbs.
  2. Slice the tomatoes into thick rounds and dip each slice into the flour mixture, followed by the egg wash, and finally coat with panko breadcrumbs. Set aside.
  3. In a bowl, combine cooked corn, feta cheese, jalapeño, red onion, cilantro, and a pinch of salt and pepper to create the corn salsa.
  4. Heat oil in a skillet over medium-high heat. Fry tomato slices for about 1 minute on each side until golden brown. Remove and drain on paper towels.
  5. To serve, layer a fried tomato slice on a plate and top it with corn salsa.
