  • 200 grams granulated sugar
  • 200 grams almond meal
  • 100 grams shelled pistachios
  • 6 large eggs
  • 1 tsp baking powder
  • A pinch of salt

  1. Wash oranges thoroughly and boil in water for about 30 minutes until soft. Let cool.
  2. Cut cooled oranges in half, remove seeds, and blend into a smooth puree.
  3. In a food processor, combine orange puree, sugar, almond meal, ground pistachios, baking powder, and salt; blend until mixed.
  4. In a separate bowl, whisk eggs until frothy; fold in the orange-nut mixture until smooth.
  5. Preheat oven to 180°C (350°F). Grease or line a 9-inch round cake pan with parchment paper.
  6. Pour batter into the prepared pan and bake for 45-50 minutes or until golden brown.
