  • 4 large flour tortillas
  • 1/2 cup creamy peanut butter
  • 1/4 cup warm water
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp fresh lime juice
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp toasted sesame oil
  • 1 tbsp fresh ginger (grated)
  • 2 cloves garlic (minced)
  • 12 tsp sriracha
  • 1 tbsp olive oil
  • 1 cup shredded carrots
  • 1 red bell pepper (thinly sliced)
  • 1 cup shredded red cabbage
  • 1/2 English cucumber (thinly sliced into half-moons)
  • 1/2 cup fresh cilantro (roughly chopped)
  • 1/4 cup chopped peanuts

Instructions

  1. Prepare the peanut sauce by whisking together peanut butter and warm water in a mixing bowl until smooth. Stir in soy sauce, lime juice, honey, rice vinegar, sesame oil, ginger, garlic, and sriracha.
  2. In a skillet over medium heat, add olive oil and cook seasoned chicken pieces until golden brown and cooked through (about 6-8 minutes).
  3. Lay out each tortilla flat and spread peanut sauce down the center. Layer with cooked chicken and fresh vegetables.
  4. Fold in the sides of the tortilla and roll tightly to enclose the filling.
