  • 1 cup fine bulgur
  • 2 cups boiling water
  • 3 cups curly parsley (minced)
  • 3/4 cup green onion (chopped)
  • 1/4 cup fresh mint (minced)
  • 1 1/2 cups roma tomatoes (diced)
  • 1/2 cup extra virgin olive oil
  • 1/2 cup fresh lemon juice
  • 1 1/2 teaspoons kosher salt

Instructions

  1. Bring at least 2 cups of water to a boil.
  2. In a large bowl, add bulgur and pour boiling water over it. Let soak for 30 minutes until tender.
  3. While bulgur soaks, chop the parsley, green onion, mint, and tomatoes; set aside.
  4. In a small bowl, whisk together olive oil, lemon juice, and salt until well combined.
  5. Drain the soaked bulgur using a colander lined with cheesecloth; squeeze out excess water.
  6. Combine the drained bulgur with chopped vegetables and herbs in a bowl; pour dressing over mixture.
  7. Toss until everything is evenly coated. Chill for at least 30 minutes before serving.
