Ingredients

  • 3 cups uncooked pasta
  • 1 chopped red bell pepper
  • 1 chopped green bell pepper
  • 1 chopped small red onion
  • 1/2 cup Kalamata olives
  • 3 mini cucumbers (or 3/4 English cucumber), chopped
  • 1 cup halved little tomatoes (grape, cherry, etc.)
  • 5 ounces crumbled feta cheese
  • 2 tablespoons red apple vinegar
  • 3 tablespoons olive oil
  • 1/2 teaspoon Dijon mustard
  • 1 clove garlic (minced)
  • 1 teaspoon fresh parsley (chopped)
  • 1/2 teaspoon dried oregano
  • 1 teaspoon (packed) brown sugar
  • Salt & pepper (to taste)

Instructions

  1. Boil salted water in a large pot and cook the pasta until al dente. Drain and cool under running water.
  2. In a jar, combine red apple vinegar, olive oil, Dijon mustard, minced garlic, parsley, oregano, and brown sugar. Shake well.
  3. In a mixing bowl, combine pasta with bell peppers, onion, olives, cucumbers, tomatoes, and feta. Pour over dressing and toss gently.
  4. Season with salt and pepper to taste. Chill for at least 30 minutes before serving.
