  • 1 can black beans (15 oz)
  • 1 can corn (15.25 oz, undrained)
  • 1 can Rotel tomatoes (10 oz, undrained)
  • 1 packet ranch dressing mix
  • 1 tsp cumin
  • 1 Tbsp chili powder
  • 1 tsp onion powder
  • 8 oz light cream cheese
  • 2 chicken breasts

Instructions

  1. Drain and rinse black beans under cold water.
  2. Place chicken breasts at the bottom of the slow cooker. Layer in corn, followed by Rotel tomatoes and black beans.
  3. Sprinkle cumin, chili powder, onion powder, and ranch dressing mix on top; stir gently.
  4. Place cream cheese block on top without stirring.
  5. Cover and cook on low for 6 to 8 hours.
  6. Shred cooked chicken using two forks and return it to the chili mixture; stir well before serving.
