  • 8 oz medjool dates, roughly chopped
  • 1 cup boiling water
  • 3/4 cup boiling milk
  • 1 tsp baking soda
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 2 tsp vanilla extract
  • 3 large eggs
  • 1 1/4 cup all-purpose flour
  • 1/2 cup Dutch processed cocoa powder
  • 1 1/2 tsp baking powder
  • 1 tsp salt
  • 8 tbsp unsalted butter for sauce
  • 3/4 cup brown sugar for sauce
  • 1 cup cream for sauce
  • 1 cup milk for sauce
  • 200g dark chocolate for sauce
  • 1/2 tsp salt for sauce

Instructions

  1. Soak chopped medjool dates in boiling water for about 10 minutes.
  2. In a bowl, beat together softened butter and brown sugar until creamy. Add eggs one at a time and mix in the vanilla extract.
  3. In another bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. Gradually add to wet ingredients until just combined.
  4. Fold in soaked dates and their liquid into the batter.
  5. Preheat the oven to 350°F (175°C). Pour the batter into a greased baking dish and bake for about 25 minutes or until a toothpick comes out clean.
  6. While baking, prepare the sauce by melting butter, brown sugar, cream, milk, dark chocolate, and salt together over medium heat.
  7. Allow the pudding to cool slightly before drizzling with warm chocolate sauce.
