  • 8 ounces elbow pasta
  • 1/2 cup dill pickle juice
  • 2/3 cup mayonnaise
  • 1/3 cup sour cream
  • 1 cup cheddar cheese (diced)
  • 1 cup sliced dill pickles
  • 3 tablespoons fresh dill (chopped)
  • 3 tablespoons white onion (finely chopped)
  • 2 tablespoons fresh parsley, finely chopped
  • 1/4 teaspoon Sriracha
  • Salt (to taste)
  • 1/2 teaspoon black pepper

Instructions

  1. Cook elbow pasta according to package instructions until al dente; rinse under cold water and drain.
  2. Combine cooked pasta with dill pickle juice in a bowl; let sit for 5 minutes and drain again.
  3. In another bowl, mix mayonnaise, sour cream, remaining pickle juice, Sriracha, salt, and pepper.
  4. In a large bowl, combine marinated pasta with cheddar cheese, sliced pickles, fresh dill, and onion; toss with dressing until well coated.
  5. Cover and refrigerate for 4-6 hours before serving; garnish with parsley if desired.
