  • 1 15-ounce can of garbanzo beans (chickpeas), drained and rinsed
  • 1/2 cup chopped dill pickles
  • 2 1/2 tablespoons olive oil
  • 2 tablespoons tahini
  • 2 tablespoons dill pickle juice
  • 1 tablespoon lemon juice
  • 1 1/2 teaspoons dill weed
  • 3/4 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/8 teaspoon cumin
  • 23 tablespoons reserved chickpea water

Instructions

  1. In a blender or food processor, combine all hummus ingredients along with two tablespoons of reserved chickpea water.
  2. Blend until smooth. If the mixture is too thick, gradually add more reserved chickpea water until the desired consistency is achieved.
  3. Transfer to an airtight container and refrigerate until ready to serve.
