  • 2 bell peppers (mixed colors), chopped
  • 1 large red onion, cut into wedges
  • 1 cup cherry tomatoes, halved
  • 4 garlic cloves, whole
  • 2 tsp dried oregano
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and chop all vegetables into bite-sized pieces. In a large bowl, toss with olive oil, salt, pepper, and oregano until evenly coated.
  3. Spread the vegetable mixture on a parchment-lined baking sheet, ensuring space between each piece for even roasting.
  4. Roast in the preheated oven for 25–30 minutes, stirring halfway through for even cooking.
