  • 1 cup raisins (soaked in apple juice)
  • ½ cup zante currants
  • 1 small apple (peeled and shredded)
  • Zest and juice of one orange or lemon (plus apple juice)

Instructions

  1. Prepare all ingredients by measuring them out for easy assembly.
  2. In a large mixing bowl, cream together the butter and dark brown sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. In another bowl, combine flour, baking powder, and mixed spices; gradually add this mixture to the butter-sugar blend.
  4. Fold in the fresh bread crumbs, soaked raisins, golden sultanas, zante currants, shredded apple, citrus zest, and juice mixture until well combined.
  5. Pour the mixture into a pudding basin covered tightly with parchment paper and foil. Steam over simmering water for about six hours.
  6. Once cooked, let it cool slightly before unmolding and serving warm with custard or cream.
