  • 1/2 Carrot, chopped
  • 1 small Onion, chopped
  • 1 teaspoon Grated fresh ginger root
  • 1/4 teaspoon Minced fresh garlic
  • 1 tablespoon Minced fresh chives
  • 1 cup Baby portobello mushrooms, sliced
  • 1/2 stalk Celery, chopped
  • 1 cup Chopped fresh shiitake mushrooms
  • 3 teaspoons Beef bouillon granules
  • 2 teaspoons Chicken stock
  • 2 quarts Water

Instructions

  1. Chop the vegetables including carrots, onions, ginger, garlic, and mushrooms.
  2. In a large saucepan or stockpot, combine chopped veggies with chicken stock, beef bouillon granules, and water. Bring to a boil over high heat.
  3. Once boiling, cover the pot, reduce heat to medium, and cook for 45 minutes.
  4. If desired for a smoother texture, blend part or all of the soup after cooking.
  5. Strain the cooked soup into another pot containing raw mushroom slices for added texture.
  6. Serve hot in small porcelain bowls garnished with freshly chopped chives.
