  • 1/4 cup sugar
  • 1 teaspoon unflavored vegan gelatin
  • 2 tablespoons cold water
  • 4 ounces white chocolate chips
  • 2 1/2 tablespoons milk
  • 1 tablespoon powdered sugar
  • 1 cup heavy whipping cream
  • 34 drops pure peppermint oil
  • 1/4 cup heavy whipping cream
  • 3 1/2 ounces bittersweet or dark chocolate
  • 2 teaspoons light corn syrup
  • 2 tablespoons very warm water

Instructions

  1. Preheat your oven to 350°F.
  2. In a bowl, combine finely ground chocolate graham crackers, melted butter, and sugar. Press the mixture into the bottom and sides of a tart pan and bake for 10 minutes. Cool for 15 minutes.
  3. Bloom the vegan gelatin in cold water, then microwave until dissolved.
  4. Melt white chocolate chips in intervals until smooth, then mix with warm milk.
  5. Combine bloomed gelatin and peppermint oil into the chocolate mixture; let it cool slightly.
  6. Whip heavy cream with powdered sugar until medium-stiff peaks form, then gently fold into the chocolate mixture.
  7. Pour the mousse into the cooled tart shell and refrigerate for several hours or overnight.
  8. Prepare the glaze by heating heavy cream and mixing in dark chocolate until smooth, then pour over the chilled mousse-filled tart.
