  • 2 pounds shrimp (peeled and deveined)
  • 1 English cucumber (small diced)
  • 3 green onions (thinly sliced)
  • ⅓ cup mayonnaise
  • ⅓ cup sour cream
  • Juice and zest from 1 large lime
  • 2 tablespoons fresh dill (chopped)
  • 1 tablespoon Dijon mustard
  • 1 garlic clove (minced)
  • Salt to taste

Instructions

  1. In a mixing bowl, combine mayonnaise, sour cream, lime juice, lime zest, dill, Dijon mustard, minced garlic, and salt. Mix until well combined.
  2. Boil water in a large pot and cook the shrimp for 2 to 3 minutes until pink and opaque.
  3. Prepare an ice bath with ice cubes and cold water. Transfer cooked shrimp to the ice bath for about 3 minutes then drain.
  4. Chop shrimp into bite-sized pieces and add to the dressing along with diced cucumber and sliced green onions. Stir gently until well coated.
