  • 1 to 2 pounds of thick-cut Turkey Turkey Bacon (cooked)
  • 3 green tomatoes (cut into slices)
  • 1/2 cup of cornmeal
  • 1/2 cup of flour
  • 1/2 cup milk
  • 1 egg
  • 1/2 cup oil for frying
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon cayenne spice
  • 1/2 teaspoon sugar
  • Lettuce
  • 12 pieces of high-quality white bread
  • 1/2 cup of duke's mayonnaise
  • 1 tablespoon spicy brown mustard
  • 2 teaspoons pickle juice
  • 1 to 2 teaspoons grated horseradish
  • 1 teaspoon paprika
  • 1/2 teaspoon cajun or creole spice mix
  • 4 dashes of hot sauce

Instructions

  1. Slice green tomatoes into thick rounds.
  2. In one bowl, mix together the cornmeal, flour, salt, pepper, cayenne spice, and sugar.
  3. In another bowl, whisk together the milk and egg until well combined.
  4. Dip each tomato slice into the egg mixture first.
  5. Then coat it in the cornmeal mixture until fully covered.
  6. Heat oil in a frying pan over medium heat.
  7. Carefully place each coated tomato slice into the hot oil.
  8. Fry until golden brown on both sides, about 3-4 minutes per side.
  9. Remove from oil and place on paper towels to drain excess oil.
  10. Toast your bread lightly if desired.
  11. Spread mayonnaise on one side of each slice of bread.
  12. Layer lettuce, turkey bacon, and fried green tomatoes onto half of the bread slices.
  13. Drizzle your special sauce over the toppings before placing another slice of bread on top.
  14. Slice each sandwich in half if preferred and serve immediately while warm!
