  • 1 can black beans (drained and rinsed)
  • 1 can corn (undrained)
  • 10 ounces Rotel tomatoes with green chilis (undrained)
  • 8 ounces cream cheese
  • 1 packet ranch seasoning
  • 1 teaspoon ground cumin
  • 1 tablespoon chili powder
  • 1 teaspoon onion powder
  • ½ cup water

Instructions

  1. Prepare the crockpot by spraying the bottom with nonstick cooking spray.
  2. Layer the chicken breasts at the bottom, followed by black beans, corn, Rotel tomatoes, ranch seasoning, ground cumin, chili powder, onion powder, and water. Mix to combine.
  3. Place the cream cheese on top without mixing.
  4. Cover and cook on low for 6-8 hours or high for 4 hours.
  5. Once cooked, shred the chicken in the mixture and serve hot with your choice of toppings.
