  • 1 lb boneless, skinless chicken breasts/thighs
  • 1 (4 oz) can diced green chiles
  • 1 (15 oz) can cannellini beans (drained)
  • 1 (15 oz) can great northern beans (drained)
  • 8 oz cream cheese (softened)
  • 2 cups chicken broth
  • 1 cup chopped onion
  • 3 cloves minced garlic
  • 2 tbsp cilantro (fresh, chopped)
  • 2 tbsp lime juice
  • 1/2 tsp cumin
  • 1/2 tsp oregano (dried)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp chili powder

Instructions

  1. Prepare all ingredients by chopping and measuring them.
  2. In your slow cooker, combine the diced green chiles, drained beans, chopped onion, minced garlic, chicken broth, cumin, oregano, salt, black pepper, and chili powder.
  3. Place the chicken on top of the mixture.
  4. Cover and cook on low for 7 hours or high for 4 hours.
  5. Shred the chicken in the chili using two forks before serving. Enjoy garnished with cilantro or other toppings as desired.
