  • 2 pounds russet potatoes, peeled and thinly sliced
  • 1 pound ribeye steak or sirloin, thinly sliced (or substitute with ground beef)
  • 1 large onion, thinly sliced
  • 1 large green bell pepper, thinly sliced
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded provolone cheese (or a mix of provolone and mozzarella)
  • 1 cup beef broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions

  1. In a large skillet over medium-high heat, heat olive oil and brown the beef until just cooked. Season with salt, pepper, garlic powder, and onion powder.
  2. Slice onions and bell peppers while beef cooks.
  3. Layer thinly sliced potatoes in the bottom of the slow cooker. Add half the beef, followed by half the onions, peppers, and cheese. Repeat layers.
  4. In a bowl, mix cream of mushroom soup, sour cream, and beef broth until smooth; pour evenly over layers in the slow cooker.
  5. Cover and cook on low for 6 hours or high for 3 hours. Add remaining cheese during the last 30 minutes of cooking.
  6. Serve hot and enjoy!
