  • 1 tbsp chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup frozen corn
  • 210 ounce cans fire roasted tomatoes and green chiles
  • 215 ounce cans cannellini beans
  • 1/2 cup buffalo sauce
  • 2 cups low sodium chicken broth
  • 4 oz cream cheese (room temperature)
  • 4 oz cottage cheese (blended)

Instructions

  1. Prepare the slow cooker by adding chicken breasts, corn, tomatoes, beans, buffalo sauce, chili powder, cumin, garlic powder, onion powder, and chicken broth.
  2. Mix well and cover. Cook on low for 4-6 hours or high for 3-4 hours.
  3. Once cooked through, remove the chicken and shred it using forks or a hand mixer.
  4. Stir in cream cheese until smooth and return shredded chicken to the pot.
  5. Cook on low for an additional 30 minutes to blend flavors.
  6. Turn off heat and mix in blended cottage cheese. Adjust seasoning as needed.
