  • 32 oz ricotta cheese
  • 2 large eggs
  • 48 oz marinara sauce
  • 12 oz gluten-free penne pasta
  • 16 oz shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese

Instructions

  1. Spray the slow cooker insert with non-stick spray.
  2. In a mixing bowl, combine ricotta cheese, eggs, parmesan cheese, basil, salt, and pepper until smooth.
  3. Spread a layer of marinara sauce at the bottom of the slow cooker.
  4. Add half of the gluten-free penne on top.
  5. Spoon half of the ricotta mixture over the pasta and sprinkle with half of the mozzarella cheese.
  6. Repeat layering with remaining sauce, pasta, ricotta mixture, and mozzarella.
  7. Finish with a final layer of marinara and mozzarella.
  8. Cook on high for 2.5 hours until bubbly and golden brown.
