  • 3 tablespoons extra-virgin olive oil (divided, plus more as needed)
  • 810 fresh sage leaves + 1 tablespoon chopped sage
  • 1 12 to 18 ounce package shelf-stable potato gnocchi
  • 1 pound ground turkey sausage
  • 3 large shallots (or 1 onion, finely chopped (about 1 cup))
  • Kosher salt and freshly ground black pepper (to taste)
  • 5 garlic cloves (minced (about 1 1/2 tablespoons))
  • 1 teaspoon crushed red pepper flakes
  • 3/4 cup dry apple vinegar
  • 2 cups (15oz can) canned pumpkin (unsweetened)
  • 1 1/2 cups chicken or vegetable stock
  • 1/2 cup mascarpone cheese (or cream cheese or heavy cream)
  • 1/2 cup grated Parmesan or Pecorino Romano cheese (for serving)

Instructions

  1. Preheat your oven to 275°F (135°C) to keep cooked gnocchi warm.
  2. In a skillet, heat 2 tablespoons of olive oil over medium heat. Cook the gnocchi until golden brown on all sides, then remove them from the skillet.
  3. In the same skillet, add more olive oil if needed and sauté chopped shallots, garlic, and turkey sausage until browned.
  4. Pour in dry apple vinegar and simmer briefly before mixing in canned pumpkin and stock; stir until smooth.
  5. Gradually add mascarpone cheese until melted. Toss in the cooked gnocchi.
  6. Serve warm, garnished with grated cheese if desired.
