  • 2 cups easy shredded chicken
  • 1/2 red onion, chopped
  • 3 garlic cloves, minced
  • 2 organic celery stalks, chopped
  • 2 medium carrots, peeled and chopped
  • 4 fresh thyme sprigs
  • 4 cups organic chicken or vegetable stock
  • 1 cup heavy cream
  • 1 teaspoon sea salt
  • 1 to 1.5 cups cooked basmati rice
  • 1 cup freshly grated parmesan cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion, garlic, celery, and carrots until softened.
  2. Stir in shredded chicken along with thyme sprigs. Cook for another 2–3 minutes.
  3. Gradually add stock and then pour in the heavy cream. Mix until combined.
  4. Season with sea salt and smoked paprika; stir well.
  5. Gently fold in basmati rice and cheeses; let simmer for an additional 5 minutes until cheese melts.
  6. Remove from heat, discard bay leaf, ladle into bowls, and enjoy!
