  • Salt and freshly ground black pepper, to taste
  • 1 cup heavy cream
  • 1 (9-ounce) package refrigerated cheese tortellini
  • 2 cups cooked chicken breast, diced or shredded
  • 4 cups fresh baby spinach
  • 1/2 cup grated Parmesan cheese, plus extra for garnish
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until soft (4-5 minutes). Stir in minced garlic and cook until fragrant (1 minute).
  2. Mix in chopped sun-dried tomatoes; cook for 2 minutes. Pour in chicken broth; bring to a gentle simmer. Season with Italian seasoning, salt, and pepper.
  3. Add cheese tortellini and cook according to package instructions (3-5 minutes). When nearly done, stir in cooked chicken and spinach; cook gently for another 2-3 minutes until spinach wilts.
