  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt and pepper (to taste)
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • ¼ tsp dried thyme
  • Fresh parsley (chopped)

Instructions

  1. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Heat olive oil in a skillet over medium heat. Cook the chicken for about 6-7 minutes on each side until golden brown and fully cooked. Remove from pan.
  2. In the same skillet, add rice and briefly stir before adding chicken broth and salt. Bring to a boil then reduce heat to low. Cover and simmer for about 15 minutes until rice is tender.
  3. In another saucepan, melt butter over medium heat. Stir in flour to make a roux, then gradually whisk in milk and remaining chicken broth until smooth. Add garlic powder and thyme; stir until thickened.
  4. Stir in cheddar and Parmesan until melted. Return the cooked chicken to the skillet with rice and pour the creamy sauce over everything.
  5. Garnish with freshly chopped parsley before serving.
