Instructions

  1. In a large pot over medium heat, heat the olive oil. Add diced onion and bell peppers; sauté for 5–7 minutes until softened.
  2. Stir in cubed chicken, Cajun seasoning, and smoked paprika; cook until browned (about 5 minutes).
  3. Add minced garlic; cook for an additional minute. Pour in chicken broth and diced tomatoes; bring to a simmer.
  4. Mix in heavy cream and add penne pasta. Cook according to package instructions until al dente.
  5. Season with salt and pepper to taste, stir in grated Parmesan cheese until melted, then serve garnished with green onions and parsley.
