  • 500g minced chicken
  • 1 egg
  • 1 cup breadcrumbs
  • 2 tbsp milk
  • 2 cloves garlic, finely chopped
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 1 tbsp olive oil for frying
  • Salt & pepper to taste
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 2 tbsp tomato paste

Instructions

  1. In a mixing bowl, combine minced chicken, egg, breadcrumbs, milk, garlic, Italian herbs, salt, and pepper. Mix until well combined and shape into small balls.
  2. Heat olive oil in a skillet over medium heat. Add meatballs and sear until golden brown on all sides (about 5-7 minutes). Remove and set aside.
  3. In the same skillet, sauté onion until translucent. Add sliced bell peppers and minced garlic; cook until softened.
  4. Stir in smoked paprika, chicken stock, heavy cream, and tomato paste. Bring to a simmer.
  5. Return meatballs to the skillet and let simmer for 10-12 minutes until fully cooked through.
