500g minced chicken
1 egg
1 cup breadcrumbs
2 tbsp milk
2 cloves garlic, finely chopped
1 onion, thinly sliced
1 red bell pepper, thinly sliced
1 yellow bell pepper, thinly sliced
1 cup chicken stock
1 cup heavy cream
1 tbsp olive oil for frying
Salt & pepper to taste
1 tbsp olive oil
1 tsp smoked paprika
2 tbsp tomato paste
Instructions
In a mixing bowl, combine minced chicken, egg, breadcrumbs, milk, garlic, Italian herbs, salt, and pepper. Mix until well combined and shape into small balls.
Heat olive oil in a skillet over medium heat. Add meatballs and sear until golden brown on all sides (about 5-7 minutes). Remove and set aside.
In the same skillet, sauté onion until translucent. Add sliced bell peppers and minced garlic; cook until softened.
Stir in smoked paprika, chicken stock, heavy cream, and tomato paste. Bring to a simmer.
Return meatballs to the skillet and let simmer for 10-12 minutes until fully cooked through.
