  • 3 Tablespoons unsalted butter
  • 1/3 cup shallots, finely chopped
  • 3 cloves garlic, minced
  • 2 cups heavy whipping cream
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 pinch nutmeg
  • 1/2 cup Parmigiano-Reggiano cheese, grated
  • 2 pounds frozen cut leaf spinach, thawed and squeezed dry

Instructions

  1. Thaw 2 pounds of frozen spinach and squeeze out excess water.
  2. In a heavy pot over medium-low heat, melt 3 tablespoons of unsalted butter. Add finely chopped shallots and sauté for 4 minutes, then add 3 minced garlic cloves and cook for 1 minute.
  3. Stir in 2 cups of heavy cream, 1 teaspoon salt, 1/4 teaspoon black pepper, and a pinch of nutmeg. Bring to a low boil and simmer for about 10 minutes until thickened.
  4. Incorporate 1/2 cup grated Parmigiano-Reggiano cheese until melted.
  5. Add the drained spinach and mix well before serving hot.
