  • ¾ cup brown sugar
  • 2 large eggs

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • 8 oz cream cheese
  • ¼ cup granulated sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • ¼ cup granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a bowl, mash the ripe bananas and mix in melted butter, brown sugar, eggs, and vanilla until smooth.
  3. In another bowl, whisk together flour, baking soda, salt, and cinnamon.
  4. Combine wet and dry ingredients gently until just mixed.
  5. For the filling, beat cream cheese with granulated sugar, one egg, and vanilla until smooth.
  6. Layer half of the banana batter into the pan followed by half of the cinnamon-sugar mixture and then the cream cheese filling.
  7. Top with remaining banana batter and sprinkle with cinnamon-sugar mixture.
  8. Use a knife to swirl through the top layer then bake for 50-60 minutes.
  9. Allow to cool before slicing.
