  • 11 oz. white chocolate, chopped
  • 5 Tablespoons unsalted butter
  • 3 Tablespoons heavy cream
  • pinch of salt
  • 1 teaspoon orange or vanilla extract (optional)
  • 1/3 cup finely chopped dried cranberries
  • 1/3 cup finely chopped toasted pistachios
  • 1/2 cup powdered sugar

Instructions

  1. In a small saucepan over low-medium heat, melt the butter. Once melted, add heavy cream and stir to combine.
  2. Stir in a pinch of salt and optional extract. Set aside.
  3. Using a double boiler, melt the chopped white chocolate until smooth.
  4. Remove from heat and gently mix in the butter mixture until combined.
  5. Fold in cranberries and pistachios. Let sit at room temperature for one hour covered with plastic wrap to prevent film formation.
  6. Refrigerate for 2-3 hours until firm enough to handle.
  7. Scoop out portions with a spoon or melon baller and roll into balls.
  8. Roll each truffle in powdered sugar until well coated.
