- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups Yukon Gold or Russet potatoes, diced
- 4 cups chicken broth
- 1 cup heavy cream (or half-and-half)
- 2 cups kale or spinach, chopped
- ½ tsp salt (adjust to taste)
- ½ tsp black pepper
- ¼ tsp crushed red pepper flakes (optional, for heat)
- 1 tbsp olive oil (if needed, for sautéing)
- In a large pot or Dutch oven over medium heat, brown the chicken sausage until fully cooked. Drain excess grease if necessary.
- Add diced onion and cook until soft, about 3–4 minutes. Stir in minced garlic and cook for another 30 seconds until fragrant.
- Pour in diced potatoes and chicken broth; bring to a boil. Reduce heat and let simmer for about 15 minutes or until potatoes are fork-tender.
- Gently stir in heavy cream and chopped greens; simmer for an additional 5 minutes until the greens are wilted.
- Season with salt, black pepper, and crushed red pepper flakes as desired before serving.
