  • 1 lb chicken sausage (mild or spicy)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups Yukon Gold or Russet potatoes, diced
  • 4 cups chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 2 cups kale or spinach, chopped
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • ¼ tsp crushed red pepper flakes (optional, for heat)
  • 1 tbsp olive oil (if needed, for sautéing)

Instructions

  1. In a large pot or Dutch oven over medium heat, brown the chicken sausage until fully cooked. Drain excess grease if necessary.
  2. Add diced onion and cook until soft, about 3–4 minutes. Stir in minced garlic and cook for another 30 seconds until fragrant.
  3. Pour in diced potatoes and chicken broth; bring to a boil. Reduce heat and let simmer for about 15 minutes or until potatoes are fork-tender.
  4. Gently stir in heavy cream and chopped greens; simmer for an additional 5 minutes until the greens are wilted.
  5. Season with salt, black pepper, and crushed red pepper flakes as desired before serving.
