1 medium onion (finely chopped)
2 cloves garlic (minced)
4 cups potatoes (peeled and diced into ½-inch chunks)
4 cups chicken broth
1 cup heavy cream or half-and-half
½ tsp salt
½ tsp black pepper
½ tsp dried thyme or Italian seasoning blend
1 tbsp olive oil

Instructions
Prepare ingredients by chopping the onion and mincing the garlic; peel and dice the potatoes.
In a skillet, heat olive oil over medium heat. Sauté onions until translucent, then add garlic for an additional minute.
