  • 4 cups chicken broth
  • 1 cup heavy cream or half-and-half
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme or Italian seasoning blend
  • 1 tbsp olive oil
  • Optional: Fresh parsley or green onions (for garnish)

Instructions

  1. Prepare ingredients by chopping the onion and mincing the garlic; peel and dice the potatoes.
  2. In a skillet, heat olive oil over medium heat. Sauté onions until translucent, then add garlic for an additional minute.
