  • 2 pounds ground beef
  • 1 cup canned pinto beans (drained, rinsed)
  • 1 small yellow onion (finely diced)
  • 1 green bell pepper (finely diced)
  • 1 cup BBQ sauce (divided)
  • 1 cup sharp cheddar cheese (shredded)
  • 2 large eggs (beaten)
  • ½ cup plain breadcrumbs
  • 1 tablespoon vegetable oil
  • 1 teaspoon garlic (minced)
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons chili powder
  • 2 teaspoons kosher salt
  • ½ teaspoon cayenne
  • ½ teaspoon black pepper

Instructions

  1. Preheat oven to 350°F and lightly spray a large loaf pan with nonstick cooking spray.
  2. In a skillet over medium heat, sauté the onion and green bell pepper in vegetable oil until softened. Add minced garlic and cook for an additional minute before cooling.
  3. In a large bowl, mix cooled vegetables with ground beef, eggs, beans, breadcrumbs, ½ cup BBQ sauce, Worcestershire sauce, and spices until just combined.
  4. Shape half of the mixture in the loaf pan; create a trench down the middle and fill it with cheese. Top with remaining mixture and seal edges.
  5. Brush the top with ¼ cup BBQ sauce. Bake for about 40 minutes before adding more BBQ sauce on top; continue baking until internal temperature reaches 160°F (71°C), roughly another 25–30 minutes.
  6. Let rest for 5 minutes before slicing.
