  • 4 large ears of fresh corn (shucked; yields about 4 cups)
  • 1 cup halved grape tomatoes
  • 1 cup diced English cucumber
  • 1/3 cup diced red onion
  • 2/3 cup crumbled feta cheese
  • 3 tablespoons finely chopped parsley
  • 2 tablespoons finely chopped basil
  • 1/4 cup olive oil
  • 1.5 tablespoons red apple vinegar
  • 1 tablespoon lemon juice
  • 1.5 teaspoons honey
  • 0.5 teaspoon minced garlic
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, whisk together olive oil, red apple vinegar, lemon juice, honey, garlic, salt, and pepper. Refrigerate.
  2. Boil a large pot of water and have an ice water bowl ready. Cook corn for 2-3 minutes until crisp.
  3. Transfer cooked corn to the ice water bath for a few minutes to stop cooking. Drain well.
  4. Cut kernels from cooled corn and place in a large bowl. Add tomatoes, cucumber, onion, feta cheese, parsley, and basil.
  5. Whisk dressing again before pouring it over the salad mixture. Toss well to combine.
