  • 1 tablespoon lime juice
  • ¼ teaspoon salt
  • 1½ cups fresh or thawed frozen corn
  • 1½ cups halved cherry tomatoes
  • ½ cup finely chopped cucumber
  • 2 tablespoons minced fresh basil
  • ⅓ cup crumbled feta cheese
  • Optional: 2 tablespoons Italian dressing

Instructions

  2. Heat the remaining tablespoon of olive oil in a skillet over medium heat and cook the corn until tender.
