  • 8 oz orecchiette pasta
  • 1 cup cooked corn kernels
  • 1 red bell pepper, diced
  • 4 slices turkey cooked and sliced
  • Fresh cilantro, chopped
  • 1/3 cup basil pesto
  • 3 tablespoons Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 tablespoons lime juice

Instructions

  1. Cook the pasta in salted water until al dente. Drain and rinse under cold water.
  2. Dice the red bell pepper, chop the cilantro, and slice the turkey while the pasta cooks.
  3. In a mixing bowl, whisk together the pesto, Greek yogurt, mayonnaise, lime juice, salt, and pepper until smooth.
  4. In a large bowl, combine the cooked pasta, corn, bell pepper, turkey and cilantro. Pour the dressing over and toss to coat evenly.
  5. Chill in the refrigerator for at least 15 minutes before serving.
