  • 2 teaspoons pure vanilla extract
  • 3 ½ cups cake flour
  • 1 tablespoon baking powder
  • ¼ teaspoon kosher salt
  • 1 cup whole milk
  • ¾ cup chopped Oreo cookies
  • 1.5 quarts Cookies and Cream ice cream, softened
  • 2 cups whipped cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, beat softened butter and sugar until light and fluffy. Add vanilla extract.
  3. Gradually mix in cake flour, baking powder, salt, alternating with whole milk until combined. Fold in chopped Oreo cookies.
  4. Divide batter between pans and bake for about 30 minutes, or until a toothpick comes out clean. Cool for 10 minutes before transferring to wire racks.
  5. Once cooled, layer one cake on a platter, spread half of the ice cream over it, add the second cake layer, and top with remaining ice cream.
  6. Cover the entire cake with whipped cream and garnish with extra chopped Oreos.
  7. Chill for at least an hour before serving.
