  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp turmeric (optional)
  • 1 (13.5 oz) can coconut milk
  • 1 cup beef or chicken broth
  • 1 tbsp tomato paste (optional, for depth)
  • Juice of lime
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat oil in a cast iron pot over medium heat. Sauté onion until translucent.
  2. Add garlic and ginger; cook until fragrant.
  3. Increase heat to medium-high. Season beef with salt and pepper; brown in batches.
  4. Return beef to pot, add spices, coconut milk, and broth; bring to a simmer.
  5. Reduce heat to low and cover; simmer for about 1.5 hours until beef is tender.
  6. Stir in lime juice before serving and garnish with cilantro.
